A Recipe for Days We Feel Stressed Out!

Are there days you just feel so exhausted, tired and stressed that you don’t want to do anything, don’t want to talk to anyone and can’t seem to think past all the negativity in life? It may feel so comforting to indulge in a box of chocolate truffles or salty french fries for the moment, but is it really worth it and will it resolve our stress? Instead try one piece of chocolate or a handful of chips and stop. Slowly chew your food and take notice of the texture, taste and how you feel after having a bite. Often times those one or two bites can be just as satisfying as having double that amount.

Try this quick and simple recipe for a delicious mood and nutrition boost. It includes berries and coconut that are naturally high in antioxidants and fiber. In addition, this recipe is gluten free and has the perfect balance of protein, healthy fats and carbohydrates. I personally would choose whole fat yogurt, as I believe whole dairy products are less processed and generally help keep you fuller longer. Give it a try!

 

 

Calming Recipe for Stress Release

Berry Coconut Parfait with Chia Seeds

  • 1 cup berries of choice (blueberries, strawberries, raspberries, or blackberries)

  • 1 cup plain yogurt (coconut yogurt could also be dairy free alternative)

  • ¼ cup nuts or seeds of choice (pistachios, almonds, cashews, sunflower seeds or pumpkin seeds)

  • ¼ cup unsweetened coconut flakes

  • 2 tsp. chia seeds (soak in ⅓ cup water for 20 minutes prior to adding to the parfait)

  • 1 tablespoon honey (optional)

Feel free to layer this with ½ cup yogurt at the bottom of the cup, then ⅛ of cup each of nuts or seeds, ⅛ cup coconut flakes, ½ the amount of chia seeds, and ½ cup fruit. Repeat the layer once more and enjoy!
